Starter Discard
What is Discard?
When you use some of your bubbly starter to make something, you have to replace what you used - this (despite sounding pretentious), is accurately referred to as 'feeding' your starter.
Now, whether you stick to our ratio: 1:1:1 or change it up, you're going to be adding in a load more flour and water and it's going to rise...and if you have too much, it may overflow and go everywhere.
You don't need tons and tons of starter unless you run a bakery.
So what do you do?
You throw a bit away. You....discard it. You discard the Discard.
You will find yourself throwing away a surprising amount every time you feed it, particularly during the first weeks when you're bringing your starter to life.
It can feel wasteful, but it isn't.
Think of it like pruning a plant - you're cutting it back to encourage more growth.

There are tons of recipes online which suggest uses for discard, and if you enjoy them: great.
I've tried a few, and thought they were rancid.
